Lal’Food has for mission to take probiotics in food applications one step further. Working in close partnership with Institut Rosell, Lal’Food is applying Institut Rosell clinically and scientifically documented probiotic strains into various food products.
Expert in live microorganisms since 1934, Institut Rosell undertakes ambitious research programs so as to better understand the properties, modes of action and beneficial effects on health of these probiotic formulations.

Institut Rosell-Lallemand is a proprietor of several documented probiotic strains; all of them being characterized by particular properties beneficial to health. Lal'Food focuses on four selected strains:
- Lactobacillus rhamnosus Rosell-11: The species Lactobacillus rhamnosus is one of the most studied in the probiotic world and most of the health benefits of probiotics have been demonstrated with this species. Several studies have shown that L. rhamnosus reduced the duration of diarrhea when given to children with gastroenteritis due to rotavirus, prevented diarrhea in cases of antibiotic therapy and helped reduce the development of atopic dermatitis in infants. |

- Lactobacillus acidophilus* Rosell-52: The species Lactobacillus acidophilus has been well studied and several probiotic effects are reported in the literature: ability to survive in the stomach and to reach the intestine alive, exerting antimicrobial activities against pathogens, alleviating symptoms of lactose intolerance, helping to prevent and reduce the duration of diarrhoea, possibly reducing the cholesterol level, and helping the natural defences. |

- Bifidobacterium longum Rosell-175: Bifidobacteria have many beneficial health effects; they have been reported to be responsible for increasing the frequency of stools, and decreasing the transit time. In the literature, B. longum has been reported to stimulate IL-1, decrease the number of Clostridia, Bacteroides and Coliform and decrease some enzymatic activity in faeces suspected to be involved in carcinogenesis. |

Many clinical and humain studies have shown that all those organisms are
safe and innocuous. They are naturally found in the stomach, intestine and colon and inhibit the growth of pathogenic organisms such as E.Coli, Salmonella, etc.
The products can be encapsulated using Lallemand’s proprietary technology to increase their resistance to certain stresses. For more informations, click here.
- Pediococcus acidilactici Rosell-1001: Pediococcus acidilactici is not naturally found in the host microflora. However, it is safe (G.R.A.S. for food applications) and has been well studied in the feed industry where several probiotic effects have been reported: balancing the intestinal microflora and reducing the growth of pathogenic bacteria. Moreover, Rosell-1001 has been shown to have positive effects on immunity response.
